Description

Aloo Palak, or Potato and Spinach Curry, is a flavorful Indian dish made with tender potatoes, spinach, garlic, ginger, and warm spices. It’s simple, comforting, savory, and naturally vegetarian, making it a delicious choice for a main course, side dish, or snack.


Ingredients

  • 3 medium potatoes, peeled and chopped
  • 2 tablespoons oil
  • 1/4 teaspoon cumin seeds
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/2 inch ginger, grated
  • 1 10-ounce bag chopped spinach, fresh or frozen
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • Salt, to taste


Instructions

  1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
  2. Heat the oil in a large saucepan over medium-high heat. Add the cumin seeds and cook until sizzling.
  3. Add the chopped onion and cook until softened, about 3 minutes.
  4. Add the garlic and ginger and cook for another minute, stirring constantly.
  5. Add the ground coriander, cumin, turmeric, and paprika, and stir to combine.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
  7. Season with salt to taste. Add the cooked potatoes and stir occasionally for about 3 minutes, allowing the flavors to blend.

  • Fresh or frozen chopped spinach can be used.
