Description
These easy Banana S’mores Muffins are loaded with graham cracker crumbs, chocolate chips, and marshmallows. They’re soft, fluffy, and packed with classic s’mores flavor in every bite.
Ingredients
- 2/3 cup packed light brown sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2/3 cup mashed ripe banana (about 2 medium bananas)
- 1/2 cup sour cream
- 2 cups all-purpose flour (240 g)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 1 teaspoon ground cinnamon
- 1 cup graham cracker crumbs, plus extra for topping
- 2/3 cup whole milk
- 1 cup miniature chocolate chips, divided
- 1 1/4 cups miniature marshmallow bits, divided
Instructions
- Preheat the oven to 400°F (200°C). Line a muffin pan with 16 paper liners and lightly spray them with nonstick baking spray, or grease the muffin pan well.
- In a large bowl, mix together the melted butter and brown sugar.
- Add the egg, vanilla extract, mashed banana, and sour cream. Mix until smooth and creamy.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
- Add the dry ingredients to the wet ingredients alternately with the milk, mixing just until combined. Do not overmix.
- Fold in 3/4 cup of the chocolate chips and 1 cup of the marshmallow bits.
- Divide the batter evenly among the prepared muffin cups.
- Sprinkle the tops with the remaining chocolate chips, remaining marshmallow bits, and extra graham cracker crumbs if desired.
- Bake for 15–16 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 2 minutes, then transfer them to a wire rack to cool completely.
- Store the cooled muffins in an airtight container.
Notes
Because these muffins contain very little butter, they may stick to paper liners. Spraying the liners with nonstick baking spray or baking directly in a well-greased muffin pan helps prevent sticking. The batter can also be baked in a greased 9×5-inch loaf pan at 350°F for about 60 minutes.
