Description
These Broccoli Mushroom Ramen Noodles are a quick and flavorful one-pan meal made with tender ramen noodles, caramelized mushrooms, crisp broccoli, and a savory garlic soy-hoisin sauce. Perfect for busy weeknights and ready in just 25 minutes.
Ingredients
- 2 packs ramen noodles (or Maggi noodles), seasoning packets discarded
- 1 tablespoon sesame oil (or neutral oil)
- 2 cups mushrooms, sliced
- 1 cup broccoli florets, bite-sized
- 1 small onion, sliced
- 3-4 garlic cloves, minced
- 1 tablespoon hoisin sauce
- 1 tablespoon dark soy sauce
- 2 teaspoons rice vinegar (or white vinegar)
- 1 tablespoon sriracha (or red chili sauce), or to taste
- 1/2 teaspoon crushed black pepper
- 3 cups water
- 1/2 teaspoon salt, or to taste
- 2-3 tablespoons spring onion greens, chopped
- 1 teaspoon toasted sesame seeds, for garnish
Instructions
- Heat the sesame oil in a large pan over medium heat. Add the sliced onions and minced garlic, then sauté for about 1 minute until fragrant.
- Add the sliced mushrooms and cook for 3-4 minutes, stirring occasionally, until they become golden brown and caramelized.
- Stir in the hoisin sauce, dark soy sauce, rice vinegar, sriracha, black pepper, and salt. Cook for another 1-2 minutes until everything is well combined.
- Add the ramen noodles, broccoli florets, and water to the pan. Cook according to the noodle package instructions, stirring occasionally with chopsticks or a fork to separate the noodles.
- Once the noodles are tender and most of the liquid has been absorbed, stir in the chopped spring onion greens.
- Garnish with toasted sesame seeds and serve immediately.
Notes
- For a saucier or soupier version, increase the amount of water or use vegetable stock instead of water.
- If using vegetable stock, reduce or omit the added salt.
- Add extra vegetables like bell peppers, carrots, or spinach, or protein such as tofu, chicken, or a poached egg.
- Avoid overcooking the noodles to prevent them from becoming mushy.
- You can also cook the noodles separately and toss them with the mushroom mixture before serving.
