Cheesy Baked Broccoli Gnocchi is a comforting one-pan dinner that’s creamy, cheesy, bubbly, and ready in about 35 minutes. Tender gnocchi and broccoli are coated in a rich cream cheese sauce, topped with mozzarella, and baked until golden and bubbling. This easy vegetarian comfort food is perfect for a simple weeknight meal.
Ingredients
- 1 lb gnocchi
- 3 cups broccoli florets
- 1 cup chicken or vegetable broth
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼-½ teaspoon red pepper flakes
- Salt and pepper, to taste
- 4 oz cream cheese, cubed
- 2 cups shredded mozzarella cheese, divided
Instructions
- Preheat the oven to 400°F.
- Bring a large pot of salted water to a boil. Add the broccoli and gnocchi and simmer for 3 minutes. Drain well and set aside.
- Heat a large ovenproof skillet with the broth over medium-high heat and bring the broth to a simmer. Add the cubed cream cheese and stir until mostly melted and combined. Add 1 cup of the mozzarella, garlic powder, onion powder, red pepper flakes, and a pinch of salt and pepper. Stir until melted, combined, and mostly smooth. Remove from heat.
- Add the broccoli and gnocchi to the cheese sauce and gently fold to combine. Top with the remaining 1 cup of mozzarella cheese.
- Bake in the preheated oven for about 15 minutes, until the cheese is bubbly and the top is golden brown. Sprinkle with extra red pepper flakes if desired.
- Serve immediately and enjoy.
Notes
- An oven-safe cast iron skillet can be used to make the cheese sauce and bake the entire dish in one pan. If you do not have an oven-safe skillet, prepare the sauce separately and transfer everything to a baking dish before baking.
- Leftovers can be stored in an airtight container in the refrigerator for 4-5 days, although the dish is best served immediately.
- To make ahead, prepare the cheesy sauce and assemble the dish in the skillet or baking dish. Refrigerate for up to 1 day, then bake before serving.
