Description
Cheesy Baked Broccoli Gnocchi is the ultimate one-pan comfort food! Soft potato gnocchi, tender broccoli, and a creamy mozzarella cheese sauce are baked until golden and bubbly. This easy vegetarian dinner is ready in just 35 minutes.
Ingredients
- 1 lb gnocchi
- 3 cups broccoli florets
- 1 cup chicken or vegetable broth
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4-1/2 teaspoon red pepper flakes
- Salt and black pepper, to taste
- 4 oz cream cheese, cubed
- 2 cups shredded mozzarella cheese, divided
Instructions
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the broccoli florets and gnocchi, then simmer for 3 minutes. Drain well and set aside.
- Heat the broth in a large oven-safe skillet over medium-high heat until simmering.
- Add the cubed cream cheese and stir until mostly melted. Stir in 1 cup of mozzarella cheese, garlic powder, onion powder, red pepper flakes, salt, and black pepper until smooth.
- Fold the cooked broccoli and gnocchi into the cheese sauce until evenly coated.
- Top with the remaining 1 cup mozzarella cheese.
- Bake for 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Sprinkle with extra red pepper flakes if desired and serve immediately.
Notes
- If you don’t have an oven-safe skillet, prepare the sauce in a saucepan and transfer everything to a baking dish before baking.
- Leftovers can be stored in an airtight container in the refrigerator for 4-5 days.
- You can assemble the dish a day ahead and refrigerate until ready to bake.
