Description

Cheesy Baked Broccoli Gnocchi is the ultimate one-pan comfort food! Soft potato gnocchi, tender broccoli, and a creamy mozzarella cheese sauce are baked until golden and bubbly. This easy vegetarian dinner is ready in just 35 minutes.


Ingredients

  • 1 lb gnocchi
  • 3 cups broccoli florets
  • 1 cup chicken or vegetable broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4-1/2 teaspoon red pepper flakes
  • Salt and black pepper, to taste
  • 4 oz cream cheese, cubed
  • 2 cups shredded mozzarella cheese, divided


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add the broccoli florets and gnocchi, then simmer for 3 minutes. Drain well and set aside.
  3. Heat the broth in a large oven-safe skillet over medium-high heat until simmering.
  4. Add the cubed cream cheese and stir until mostly melted. Stir in 1 cup of mozzarella cheese, garlic powder, onion powder, red pepper flakes, salt, and black pepper until smooth.
  5. Fold the cooked broccoli and gnocchi into the cheese sauce until evenly coated.
  6. Top with the remaining 1 cup mozzarella cheese.
  7. Bake for 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
  8. Sprinkle with extra red pepper flakes if desired and serve immediately.

Notes

  • If you don’t have an oven-safe skillet, prepare the sauce in a saucepan and transfer everything to a baking dish before baking.
  • Leftovers can be stored in an airtight container in the refrigerator for 4-5 days.
  • You can assemble the dish a day ahead and refrigerate until ready to bake.
