Description

These Chicken Alfredo Zucchini Roll Ups are a cheesy, comforting dinner made with tender zucchini, shredded chicken, creamy Alfredo sauce, mozzarella, and Parmesan. This easy baked dish comes together quickly for a satisfying low-carb meal.


Ingredients

  • 1 large thick zucchini
  • 2 cups shredded chicken, rotisserie chicken works great
  • 2 cups Alfredo sauce, homemade or store-bought
  • 1 1/4 cups shredded mozzarella cheese
  • 1/4 cup shaved Parmesan cheese
  • 1 teaspoon dried parsley or fresh parsley


Instructions

  1. Preheat the oven to 375°F. Lightly spray a 9×5-inch or 8×8-inch baking dish with cooking spray and set aside.
  2. Using a mandolin or large chef’s knife, slice the zucchini lengthwise into 1/8-inch thick slices. You will need about 12 slices.
  3. Place shredded chicken over each zucchini slice, then add 1 tablespoon of Alfredo sauce. Roll each slice up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining zucchini and filling.
  4. Pour the remaining Alfredo sauce over the zucchini roll ups, then sprinkle the mozzarella and Parmesan cheese evenly over the top.
  5. Bake for 25 minutes, or until the sauce is bubbly and the zucchini is fully cooked.
  6. Remove from the oven and garnish with parsley. Let the roll ups rest for 10 minutes before serving.
