Loaded with queso and full of flavor, this Chicken and Rice Queso Casserole is an easy family dinner that’s ready in less than an hour and always a crowd-pleaser.
Ingredients
- 1 tablespoon oil
- 1 pound chicken breast
- 1 oz taco seasoning
- 15 oz queso
- 3/4 cup half and half
- 4.5 oz chopped green chiles
- 3/4 cup finely minced onion
- 2 cups instant white rice
- 1 cup shredded Mexican cheese blend
Instructions
- Preheat the oven to 350°F and grease a 3-quart casserole dish.
- Dice the chicken into bite-sized pieces.
- Heat the oil in a skillet and cook the chicken until fully cooked.
- Season the chicken with taco seasoning.
- Cook the rice according to the package instructions.
- In a large bowl, combine the cooked rice, queso, half and half, green chiles, and minced onion.
- Transfer the rice mixture to the prepared casserole dish.
- Top with the cooked chicken and shredded Mexican cheese.
- Bake for 20-25 minutes until the cheese is melted and the casserole is heated through.
- Remove from the oven and garnish with cilantro if desired.
Notes
- Use rotisserie chicken to save preparation time.
- Any variety of rice can be used if prepared according to the package directions.
- Prepare the casserole up to 48 hours in advance and refrigerate before baking.
- Garnish with fresh cilantro before serving if desired.
