Description

Loaded with queso and full of flavor, this Chicken and Rice Queso Casserole is an easy family dinner that’s ready in less than an hour and always a crowd-pleaser.


Ingredients

  • 1 tablespoon oil
  • 1 pound chicken breast
  • 1 oz taco seasoning
  • 15 oz queso
  • 3/4 cup half and half
  • 4.5 oz chopped green chiles
  • 3/4 cup finely minced onion
  • 2 cups instant white rice
  • 1 cup shredded Mexican cheese blend


Instructions

  1. Preheat the oven to 350°F and grease a 3-quart casserole dish.
  2. Dice the chicken into bite-sized pieces.
  3. Heat the oil in a skillet and cook the chicken until fully cooked.
  4. Season the chicken with taco seasoning.
  5. Cook the rice according to the package instructions.
  6. In a large bowl, combine the cooked rice, queso, half and half, green chiles, and minced onion.
  7. Transfer the rice mixture to the prepared casserole dish.
  8. Top with the cooked chicken and shredded Mexican cheese.
  9. Bake for 20-25 minutes until the cheese is melted and the casserole is heated through.
  10. Remove from the oven and garnish with cilantro if desired.

Notes

  • Use rotisserie chicken to save preparation time.
  • Any variety of rice can be used if prepared according to the package directions.
  • Prepare the casserole up to 48 hours in advance and refrigerate before baking.
