Description

Chicken Cordon Bleu Quesadillas combine tender chicken, savory ham, gooey Swiss or Provolone cheese, crispy toasted breadcrumbs, and a rich Parmesan Dijon sauce inside crispy golden tortillas. A quick and easy twist on the classic Chicken Cordon Bleu.


Ingredients

  • Quesadillas:
  • 2 (8-10 inch) flour tortillas
  • 1/4 cup grilled chicken breast, sliced
  • 2-3 slices deli ham
  • 4 slices Swiss or Provolone cheese
  • 2 tablespoons toasted breadcrumbs
  • 2 tablespoons melted butter
  • Parmesan Dijon Sauce:
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1 chicken bouillon cube
  • 1 tablespoon Dijon mustard
  • Dash hot sauce (optional)
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste


Instructions

  1. To make the sauce, melt butter in a medium saucepan over medium heat.
  2. Whisk in the flour and chicken bouillon. Cook for 1-2 minutes.
  3. Slowly whisk in the milk until smooth.
  4. Add Dijon mustard and hot sauce, if using. Cook, whisking frequently, for about 5 minutes until thickened.
  5. Remove from the heat and stir in the Parmesan cheese. Keep warm over low heat.
  6. Melt butter in a large skillet over medium heat.
  7. Place one tortilla in the skillet.
  8. Layer cheese, ham, toasted breadcrumbs, more cheese, chicken, a few spoonfuls of Parmesan Dijon sauce, additional breadcrumbs, and another layer of cheese.
  9. Top with the second tortilla.
  10. Cook until the bottom is golden brown, then carefully flip and cook until the second side is golden and the cheese is melted.
  11. Slice into wedges and serve with the remaining Parmesan Dijon sauce.

Notes

  • Cook over medium heat so the cheese melts before the tortilla browns too much.
  • Store-bought breaded chicken can replace grilled chicken and breadcrumbs.
  • Shredded cheese works just as well as sliced cheese.
  • This sauce recipe makes enough for several quesadillas.
  • Homemade breadcrumbs can be made by pulsing bread in a food processor and baking at 350°F for about 5 minutes.
