Description
Chicken Noodle Casserole is an easy comfort food made with tender shredded chicken, egg noodles, sweet peas, corn, creamy chicken soup, cheese, bacon, and crispy fried onions.
Ingredients
- 2 cups uncooked egg noodles
- 2 large chicken breasts, cooked and shredded, about 2 cups
- 1 can whole kernel corn, 15.25 oz, drained
- 1 can no-salt sweet peas, 15 oz, drained
- 1 cup milk
- 1 can condensed cream of chicken soup, 22.6 oz
- 1 tablespoon minced onions
- 1 tablespoon granulated garlic
- 1/2 cup shredded Colby Jack cheese
- 1/4 cup cooked bacon, chopped, or real bacon bits
- 1/2 cup French fried onions
Instructions
- Preheat the oven to 350°F.
- Spray a 9×13-inch casserole dish with cooking spray and set aside.
- Cook the egg noodles according to the package directions, usually 6-8 minutes. Drain and transfer to a large bowl.
- Add the cooked shredded chicken, corn, peas, condensed cream of chicken soup, milk, minced onions, granulated garlic, Colby Jack cheese, and bacon.
- Fold the ingredients together until well combined, then transfer the mixture to the prepared baking dish.
- Sprinkle the French fried onions evenly over the top.
- Bake for 25-30 minutes, or until the casserole is hot and bubbling throughout.
Notes
- Egg noodles are recommended for this casserole because other pasta shapes, such as elbow macaroni, can absorb more moisture and leave the casserole dry.
- Leftover cooked chicken or rotisserie chicken works well in this recipe.
- Use real bacon or real bacon bits for the best flavor and texture.
- Do not overcook the noodles before baking; cook them according to the package directions.
