Description

Coconut Key Lime Crinkle Cookies are bursting with key lime flavor and a hint of sweet coconut. Soft, chewy, and coated in powdered sugar, they’re perfect for any time of year.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup sweetened shredded coconut
  • 2 large eggs
  • 1/4 cup key lime juice
  • 1 lime, zested (divided)
  • 2 tsp coconut extract
  • 1/2 cup powdered sugar


Instructions

  1. Whisk together flour, baking powder, and salt; set aside.
  2. Beat butter, sugar, and coconut until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in key lime juice, coconut extract, and half of the lime zest.
  5. Reduce mixer speed and gradually add flour mixture until combined.
  6. Refrigerate dough for 20 minutes.
  7. Preheat oven to 350°F and line baking sheets with parchment paper or silicone mats.
  8. Mix powdered sugar with remaining lime zest in a shallow bowl.
  9. Scoop dough into balls and roll each completely in the sugar mixture.
  10. Place on baking sheets 2 inches apart.
  11. Bake for 12–15 minutes until puffed and lightly firm around the edges.
  12. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
