Description

Creamy Caprese Pasta Salad combines the classic flavors of Caprese salad with tender pasta for a refreshing and satisfying dish. With juicy cherry tomatoes, mozzarella, fresh basil, and a simple dressing, it’s perfect for summer gatherings, picnics, or a light family meal.

Ingredients

  • 1 pound small pasta (such as fusilli, orecchiette, or penne)
  • 16 ounces mozzarella balls (ciliegine or pearls)
  • 3 cups cherry tomatoes
  • 1/2 cup fresh basil, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons white balsamic vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 clove garlic, minced

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water to cool completely.
  2. In a mixing bowl, whisk together the olive oil, white balsamic vinegar, kosher salt, black pepper, and minced garlic.
  3. In a large bowl, combine the cooled pasta, mozzarella balls, cherry tomatoes, and sliced basil.
  4. Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving for the best flavor.

Notes

  • For extra creaminess, you can stir in a spoonful of pesto or a small amount of mayonnaise before serving.
  • Use ripe cherry tomatoes and fresh basil for the best flavor.
  • This salad is delicious as a side dish or a light vegetarian main course.
