Description
This viral crispy smashed potato salad is the ultimate summer side dish. Crispy smashed potatoes are tossed with crunchy vegetables, fresh herbs, and a creamy Greek yogurt dressing for a potato salad everyone will love.
Ingredients
- 2 pounds baby Yukon gold potatoes
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/4 cup fresh chopped dill
- 1/4 cup fresh chopped parsley
- 1/2 cup chopped celery
- 1/3 cup chopped pickles
- 1/4 cup chopped scallions
- 1/3 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1/2 cup light mayo
- 2 teaspoons Dijon mustard
- 2 tablespoons pickle juice
- 1 tablespoon garlic paste or minced garlic
- Salt and pepper, to taste
Instructions
- Add the baby potatoes to a medium pot, cover with water, and boil for 17–20 minutes, or until fork tender. Drain well and place on a clean towel to dry for a few minutes.
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Arrange the potatoes on the baking sheet, leaving a little space between each one. Carefully smash each potato using a small mason jar or thick glass until about 1/2 inch thick.
- Brush the smashed potatoes with olive oil and season with kosher salt and black pepper.
- Bake for 20–25 minutes, or until golden and crispy. Remove from the oven and let cool for a few minutes.
- In a medium bowl, whisk together the Greek yogurt, mayo, Dijon mustard, pickle juice, garlic, salt, and pepper until smooth.
- In a large salad bowl, add the crispy smashed potatoes, dill, parsley, celery, pickles, scallions, feta cheese, and dressing.
- Toss gently with tongs or large spoons until everything is well coated in the dressing.
- Top with extra scallions, herbs, and feta if desired, then serve.
Notes
- Baby Yukon gold potatoes or baby red potatoes work best for this recipe.
- This salad is best when the ingredients are stored separately and mixed just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
