Description

This viral Dirty Martini Pasta Salad takes everything you love about a dirty martini and turns it into a light and refreshing pasta salad with salty olives, feta cheese, chewy pasta, and a simple olive brine dressing.


Ingredients

  • 1/2 pound pasta of choice
  • 1 cup pitted large green olives, roughly chopped
  • 100 g feta cheese, cubed or blue cheese crumbles
  • 1/3 cup extra virgin olive oil
  • 1/4 cup olive brine
  • 1 clove fresh garlic, minced
  • 1 lemon
  • Black pepper, to taste


Instructions

  1. Cook the pasta according to the package instructions.
  2. Drain and rinse the pasta with cold water.
  3. In a mason jar, combine olive oil, olive brine, garlic, lemon zest, lemon juice, and black pepper.
  4. Close the jar and shake until the dressing is well combined.
  5. In a large bowl, combine the cooked pasta, chopped olives, and feta cheese.
  6. Pour the dressing over the salad and toss to combine.
  7. Taste and adjust the seasoning if necessary.
  8. Chill for 30 minutes before serving.

Notes

  • Lightly salt the pasta water because the olives and feta are already salty.
  • Green olives provide the most traditional dirty martini flavor.
  • Use gluten-free pasta if needed.
  • Chill the salad for at least 30 minutes before serving.
  • Store in an airtight container in the refrigerator for up to 3 days.
