Description
This viral Dirty Martini Pasta Salad takes everything you love about a dirty martini and turns it into a light and refreshing pasta salad with salty olives, feta cheese, chewy pasta, and a simple olive brine dressing.
Ingredients
- 1/2 pound pasta of choice
- 1 cup pitted large green olives, roughly chopped
- 100 g feta cheese, cubed or blue cheese crumbles
- 1/3 cup extra virgin olive oil
- 1/4 cup olive brine
- 1 clove fresh garlic, minced
- 1 lemon
- Black pepper, to taste
Instructions
- Cook the pasta according to the package instructions.
- Drain and rinse the pasta with cold water.
- In a mason jar, combine olive oil, olive brine, garlic, lemon zest, lemon juice, and black pepper.
- Close the jar and shake until the dressing is well combined.
- In a large bowl, combine the cooked pasta, chopped olives, and feta cheese.
- Pour the dressing over the salad and toss to combine.
- Taste and adjust the seasoning if necessary.
- Chill for 30 minutes before serving.
Notes
- Lightly salt the pasta water because the olives and feta are already salty.
- Green olives provide the most traditional dirty martini flavor.
- Use gluten-free pasta if needed.
- Chill the salad for at least 30 minutes before serving.
- Store in an airtight container in the refrigerator for up to 3 days.
