Description

Easy Peanut Butter Chicken is a rich and flavorful dinner made with tender chicken, creamy peanut butter, tomatoes, coconut cream, and warm spices. This comforting dish comes together quickly and is perfect served over rice or with warm naan bread.


Ingredients

  • 2 tbsp vegetable oil
  • 450 g chicken breast, cut into bite-size pieces
  • 1 medium onion, finely diced
  • 4 garlic cloves, finely chopped
  • 1 tbsp fresh ginger, finely chopped
  • 1/2 red chili pepper, deseeded and finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp soy sauce
  • 1 (400 g) can chopped tomatoes
  • 50 g natural peanut butter
  • 200 ml chicken stock
  • 1 tbsp honey
  • 100 ml coconut cream
  • 30 g toasted peanuts
  • Fresh coriander, chopped
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Heat the vegetable oil in a large deep pan over medium-high heat.
  2. Add the chicken and cook for 4–5 minutes until no longer pink.
  3. Stir in onion, garlic, ginger, and red chili. Cook for 1 minute.
  4. Add cumin, coriander, and soy sauce. Stir and cook for another minute.
  5. Add chopped tomatoes and cook for 1 minute.
  6. Stir in peanut butter and chicken stock until smooth.
  7. Add honey and coconut cream and mix well.
  8. Reduce heat to low-medium and simmer for 4–5 minutes.
  9. Stir in toasted peanuts and fresh coriander.
  10. Season with salt and pepper to taste.
  11. Serve hot over rice or with naan bread.

Notes

  • Use smooth or crunchy peanut butter according to preference.
  • Adjust the chili level for a milder or spicier dish.
  • Fresh coriander adds a bright finish and should be added at the end.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Delicious served with rice, naan, or roasted vegetables.
