Description
These Easy Zucchini Fritters are golden, crispy on the outside, and tender on the inside. Made with fresh zucchini, cheese, and chives, they’re a quick family-friendly side dish or light meal that’s ready in just 25 minutes.
Ingredients
- 4 medium zucchini, coarsely shredded
- 1/2 tsp salt
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/3 cup shredded Cheddar or Parmesan cheese
- 1 tbsp chopped chives, plus extra for serving
- Salt and black pepper, to taste
- Olive oil, for frying
Instructions
- Place the shredded zucchini in a colander and toss with 1/2 teaspoon salt. Let stand for 10 minutes.
- Transfer the zucchini to a clean kitchen towel and squeeze out as much liquid as possible.
- In a medium bowl, whisk together the flour, eggs, shredded cheese, chives, salt, and pepper until smooth.
- Fold the drained zucchini into the batter until evenly combined.
- Heat a thin layer of olive oil in a large skillet over medium-high heat.
- Drop the batter by tablespoonfuls into the skillet and gently flatten each fritter with the back of a spoon.
- Cook for about 2 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate and serve warm with extra chives if desired.
Notes
- Drain the zucchini well to prevent soggy fritters.
- Parmesan, cheddar, or mozzarella all work well.
- Fresh parsley or thyme can replace the chives.
- Add chili flakes or lemon zest for extra flavor.
- Freeze cooked fritters for up to 3 months and reheat in a 325°F oven until hot.
