Ingredients
- For the Peanut Butter Cookies:
- 2 3/4 cups all-purpose flour, spooned and leveled
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 cup brown sugar, lightly packed
- 1 cup peanut butter, not natural or whipped
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup chopped peanuts, optional
- For the Marshmallow Frosting:
- 1 cup unsalted butter, softened
- 2 cups powdered sugar, sifted
- 1 (7-ounce) jar marshmallow cream
- 1 tablespoon milk or cream, if needed
Instructions
- Preheat the oven. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Combine the dry ingredients. Sift together the flour, cornstarch, baking soda, and salt in a large bowl.
- Mix the wet ingredients. In a separate large bowl, beat the softened butter and both sugars until fluffy. Beat in the peanut butter, eggs, and vanilla extract.
- Make the dough. Turn the mixer to low speed and gradually beat in the flour mixture until combined.
- Shape the cookies. Form the dough into balls about 1 tablespoon in size and place them at least 2 inches apart on the prepared baking sheets. If desired, press a few chopped peanuts onto the top of each cookie.
- Bake. Bake for 8–10 minutes, until the tops look just set. Allow the cookies to cool completely before filling.
- Beat the butter. To make the marshmallow frosting, beat the softened butter in a large bowl with an electric mixer until smooth.
- Add the powdered sugar. Turn the mixer to low and carefully mix in the sifted powdered sugar.
- Finish the frosting. Beat in the marshmallow cream on medium speed. If the frosting is too thick, add 1 tablespoon of milk or cream.
- Assemble the sandwiches. Spread marshmallow frosting on the flat bottom of one cooled cookie, then place a second cookie on top to make a sandwich. Repeat with the remaining cookies and frosting.
Notes
- Allow the cookies to cool completely before adding the marshmallow frosting.
- Use regular creamy peanut butter rather than natural or whipped peanut butter for the intended cookie texture.
- Chopped peanuts are optional and can be pressed onto the cookie dough before baking.
- Add the milk or cream to the frosting only if needed to loosen its consistency.
