Description
Fresh Peach Cobbler is an easy homemade dessert featuring juicy peaches baked beneath a golden, buttery cinnamon topping. It’s the perfect summer comfort food and tastes amazing served warm with a scoop of dairy-free or regular vanilla ice cream.
Ingredients
- For the Filling:
- 8 large fresh peaches, peeled, pitted, and sliced
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 teaspoon lemon juice
- 2 teaspoons cornstarch
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- For the Topping:
- 1 1/2 cups all-purpose flour
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick Earth Balance® butter, cut into small pieces
- 1/3 cup boiling water
- Additional Topping:
- 4 teaspoons organic sugar
- 1 1/2 teaspoons cinnamon
Instructions
- Preheat the oven to 425°F.
- Place the sliced peaches in a large mixing bowl.
- Add the brown sugar, sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Stir until the peaches are evenly coated.
- Transfer the peach mixture to an ungreased 9×13-inch baking dish and bake for 10 minutes.
- Meanwhile, whisk together the flour, brown sugar, sugar, baking powder, and salt in a medium bowl.
- Cut the butter into the flour mixture using a pastry blender until crumbly.
- Pour in the boiling water and stir until combined.
- Spoon the topping evenly over the hot peaches, gently spreading it to cover the fruit.
- Mix the remaining sugar and cinnamon together and sprinkle over the topping.
- Bake for about 35 minutes, or until the topping is golden brown.
- Serve warm with dairy-free vanilla ice cream or your favorite vanilla ice cream.
