Description

Fresh Peach Cobbler is an easy homemade dessert featuring juicy peaches baked beneath a golden, buttery cinnamon topping. It’s the perfect summer comfort food and tastes amazing served warm with a scoop of dairy-free or regular vanilla ice cream.


Ingredients

  • For the Filling:
  • 8 large fresh peaches, peeled, pitted, and sliced
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • For the Topping:
  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water
  • Additional Topping:
  • 4 teaspoons organic sugar
  • 1 1/2 teaspoons cinnamon


Instructions

  1. Preheat the oven to 425°F.
  2. Place the sliced peaches in a large mixing bowl.
  3. Add the brown sugar, sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Stir until the peaches are evenly coated.
  4. Transfer the peach mixture to an ungreased 9×13-inch baking dish and bake for 10 minutes.
  5. Meanwhile, whisk together the flour, brown sugar, sugar, baking powder, and salt in a medium bowl.
  6. Cut the butter into the flour mixture using a pastry blender until crumbly.
  7. Pour in the boiling water and stir until combined.
  8. Spoon the topping evenly over the hot peaches, gently spreading it to cover the fruit.
  9. Mix the remaining sugar and cinnamon together and sprinkle over the topping.
  10. Bake for about 35 minutes, or until the topping is golden brown.
  11. Serve warm with dairy-free vanilla ice cream or your favorite vanilla ice cream.
