Description

This savory Garlic Butter Grilled Cheese combines a golden, crispy garlic-butter exterior with a rich, gooey cheese center. It’s an easy comfort food that’s perfect for a quick lunch, simple dinner, or alongside a warm bowl of tomato soup.


Ingredients

  • 2 tablespoons butter, softened to room temperature
  • 1 tablespoon extra virgin olive oil
  • 2 cloves fresh garlic, finely minced
  • 1 tablespoon flat-leaf parsley, finely chopped
  • 2 tablespoons finely shredded Parmesan cheese
  • 4 thick slices rustic bread, white, Italian, or sourdough
  • 4 slices mozzarella cheese, or a blend of cheddar and provolone
  • A small pinch of fine sea salt


Instructions

  1. In a mixing bowl, thoroughly blend the softened butter with olive oil, minced garlic, parsley, Parmesan cheese, and a small pinch of salt until smooth and spreadable.
  2. Evenly coat one side of each bread slice with the prepared garlic butter spread.
  3. Warm a skillet over medium heat. Place two slices of bread in the pan with the buttered sides facing down.
  4. Top each slice with two slices of cheese.
  5. Cover with the remaining bread slices, positioning the buttered sides facing up.
  6. Cook for 3 to 4 minutes, or until the bottom is golden brown and crisp.
  7. Gently flip the sandwiches and cook the other side for another 3 to 4 minutes, or until deeply golden and the cheese has melted completely.
  8. Slice the sandwiches in half and serve immediately while warm and melty.

Notes

  • You can substitute 1 teaspoon garlic powder for the fresh garlic and 1 teaspoon dried parsley flakes for fresh parsley.
  • Use mozzarella or a combination of cheddar and provolone for a flavorful, melty filling.
