Ingredients
- 1 tbsp oil
- 1 onion, diced
- 3 carrots, diced
- 5 potatoes, chopped
- 1 celery stalk, sliced
- 3 garlic cloves, minced
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups vegetable broth
- 2 1/3 cups frozen peas
- 1/2 cup coconut milk or cream
- 2 tbsp cornstarch
Instructions
- Heat oil in a pot over medium heat.
- Sauté onion, carrots, potatoes, celery, and garlic.
- Add broth and simmer until vegetables soften.
- Add peas and cook until tender.
- Mix cornstarch with cream and stir into stew.
- Simmer until thickened and creamy.
- Adjust seasoning and serve hot.

- You can blend part of the stew for a creamier texture.
