Description

Hearty veggie stew loaded with potatoes, carrots, peas, and herbs in a comforting one-pot creamy broth. Healthy, filling, and easy to make.


Ingredients

  • 1 tbsp oil
  • 1 onion, diced
  • 3 carrots, diced
  • 5 potatoes, chopped
  • 1 celery stalk, sliced
  • 3 garlic cloves, minced
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups vegetable broth
  • 2 1/3 cups frozen peas
  • 1/2 cup coconut milk or cream
  • 2 tbsp cornstarch


Instructions

  1. Heat oil in a pot over medium heat.
  2. Sauté onion, carrots, potatoes, celery, and garlic.
  3. Add broth and simmer until vegetables soften.
  4. Add peas and cook until tender.
  5. Mix cornstarch with cream and stir into stew.
  6. Simmer until thickened and creamy.
  7. Adjust seasoning and serve hot.

Notes

  • You can blend part of the stew for a creamier texture.
  • Add extra herbs for stronger flavor.
