These Keto Peach Cobbler Bars feature a tender almond flour crust, a naturally sweet peach filling, and a creamy drizzle on top. They capture all the flavors of classic peach cobbler while keeping the carbs low with only 4.4g net carbs per serving.
Ingredients
- Filling
- 1 lb (453.59 g) peeled, chopped peaches
- 1/4 cup (50 g) allulose or BochaSweet
- 1/2 teaspoon glucomannan or xanthan gum
- Crust
- 2 1/4 cups (252 g) almond flour
- 1/2 cup (100 g) brown sugar replacement (erythritol recommended)
- 1/4 cup (30 g) coconut flour
- 1/2 teaspoon salt
- 1/2 cup (113.5 g) butter, melted
- 3/4 teaspoon vanilla extract
- Drizzle
- 1/4 cup (47.5 g) powdered sweetener
- 1 1/2 tablespoons heavy cream
- Water, as needed to thin
Instructions
- In a medium saucepan over medium-low heat, combine the peaches and sweetener. Bring to a simmer, then reduce the heat and cook until the sweetener dissolves and the peaches release their juices.
- Remove from the heat and whisk in the glucomannan or xanthan gum. Let the filling cool until thickened.
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the almond flour, brown sweetener, coconut flour, and salt. Stir in the melted butter and vanilla until the dough clumps together.
- Press a little over half of the dough into a greased 9×9-inch metal baking pan. Bake for 10-12 minutes until the edges are lightly golden. Cool slightly.
- Spread the peach filling evenly over the baked crust.
- Crumble the remaining dough over the filling, pressing lightly to help it adhere.
- Bake for another 20-25 minutes, until the topping is golden brown and the filling is bubbly.
- Cool completely in the pan, then refrigerate for 1 hour to firm up.
- Whisk together the powdered sweetener and heavy cream, adding a little water until the drizzle reaches a thick, pourable consistency. Drizzle over the chilled bars before serving.
Notes
- Store the bars in a covered container in the refrigerator for up to 1 week.
- The crust will soften slightly after a few days in the refrigerator.
- For the best texture, chill the bars completely before slicing.
