These Key Lime Pie Rice Krispie Treats are a fun no-bake dessert made with gooey marshmallows, crispy rice cereal, fresh key lime juice and zest, finished with graham cracker crumbs and a white chocolate drizzle. They’re sweet, tangy, and perfect for summer parties or potlucks.
Ingredients
- 5 cups Rice Krispies cereal
- 10 cups mini marshmallows
- 5 tablespoons unsalted butter
- 1/2 cup key lime juice
- 2 tablespoons key lime zest
- 1 cup graham cracker crumbs
- 1 cup white chocolate chips
- 1/2 teaspoon coconut oil
- Optional:
- 1/2 cup coconut flakes
- 1/4 cup crushed nuts
- A few drops green food coloring
Instructions
- Melt the butter in a large saucepan over low heat. Add the mini marshmallows and stir until completely melted and smooth.
- Stir in the key lime juice and key lime zest until well combined.
- Pour the marshmallow mixture over the Rice Krispies cereal and gently fold until evenly coated.
- Press the mixture into a parchment-lined 9×9-inch baking dish without packing it too tightly.
- Sprinkle the graham cracker crumbs evenly over the top.
- Melt the white chocolate chips with the coconut oil until smooth, then drizzle over the treats.
- Refrigerate for 30 minutes until set.
- Slice into 16 squares and serve.
Notes
- Use fresh marshmallows for the softest texture.
- Don’t press the mixture too firmly into the pan or the treats may become dense.
- Add extra lime zest for a brighter citrus flavor.
- Store in an airtight container at room temperature for up to 3 days.
