Description

This lemony chickpea feta salad is a fresh and flavorful Mediterranean-inspired dish packed with chickpeas, feta cheese, herbs, and a bright lemon vinaigrette. Perfect for meal prep, picnics, or a quick healthy lunch.


Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 8 oz feta cheese, diced or crumbled
  • 1/2 cup finely diced red onion
  • 1/3 cup chopped parsley
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1 tbsp honey or maple syrup
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper


Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper.
  2. Add chickpeas, feta cheese, red onion, and parsley to the bowl.
  3. Toss everything together until well combined.
  4. Taste and adjust seasoning with additional salt and pepper if needed.
  5. Serve immediately or refrigerate until ready to enjoy.

Notes

  • For a vegan version, use dairy-free feta and maple syrup instead of honey.
