Description
This lemony chickpea feta salad is a fresh and flavorful Mediterranean-inspired dish packed with chickpeas, feta cheese, herbs, and a bright lemon vinaigrette. Perfect for meal prep, picnics, or a quick healthy lunch.
Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 8 oz feta cheese, diced or crumbled
- 1/2 cup finely diced red onion
- 1/3 cup chopped parsley
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1/2 tsp lemon zest
- 1 tbsp honey or maple syrup
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, honey or maple syrup, kosher salt, and black pepper.
- Add chickpeas, feta cheese, red onion, and parsley to the bowl.
- Toss everything together until well combined.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve immediately or refrigerate until ready to enjoy.
Notes
- For a vegan version, use dairy-free feta and maple syrup instead of honey.
- This salad keeps well in the refrigerator for 3–4 days.
