Description

These Mint Chip Brookies combine rich, fudgy brownies with soft peppermint chocolate chip cookies in one irresistible dessert bar. Perfect for holidays, parties, or whenever you can’t decide between brownies and cookies.


Ingredients

  • For the Brownies
  • 4 oz (113 g) unsweetened baking chocolate, coarsely chopped
  • 3/4 cup (170 g) unsalted butter
  • 1 3/4 cups (350 g) granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons (10 g) unsweetened cocoa powder
  • 1 cup (124 g) all-purpose flour
  • For the Mint Chip Cookies
  • 1/2 cup (113 g) unsalted butter
  • 3/4 cup (150 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (248 g) all-purpose flour
  • 8–10 drops green food coloring (optional)
  • 1 1/2 cups (255 g) chocolate chips


Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9×13-inch baking pan with foil and coat with nonstick cooking spray.
  2. Microwave the baking chocolate and butter together, stirring every 30 seconds until smooth. Stir in the sugar, eggs, vanilla, cocoa powder, salt, and flour until combined. Spread the brownie batter into the prepared pan.
  3. In another bowl, cream together the butter and sugar. Beat in the egg, vanilla extract, peppermint extract, baking soda, and salt.
  4. Mix in the flour, then stir in the green food coloring if using. Fold in the chocolate chips.
  5. Drop tablespoon-sized portions of cookie dough over the brownie batter. Flatten each piece slightly and gently press into the brownie layer.
  6. Bake for 30–40 minutes, until the cookie layer is lightly golden and a toothpick inserted into the center comes out with moist crumbs.
  7. Cool completely before slicing into bars. Store in an airtight container for up to 4 days or freeze for up to 3 months.

Notes

  • Use a metal baking pan for the most even baking.
  • If using salted butter, reduce the salt in both layers to 1/4 teaspoon each.
  • A boxed brownie mix may be substituted for the homemade brownie layer.
  • For a firmer brownie, bake with the cookie layer on the bottom instead.
