Ingredients
- 4 cups (600 g) fresh peaches, peeled and sliced
- 2 tablespoons lemon juice
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 4 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon vanilla extract
Instructions
- Place the sliced peaches, lemon juice, brown sugar, cornstarch, and cinnamon in a large non-stick skillet over medium heat.
- Cook, stirring constantly, for 5-7 minutes until the peaches are tender and the juices have thickened into a glossy glaze.
- Meanwhile, melt the butter in a small saucepan over medium heat.
- Stir in the rolled oats, brown sugar, and salt. Cook for 3-5 minutes, stirring frequently, until the oats are toasted and the sugar is caramelized.
- Remove the oat mixture from the heat and stir in the vanilla extract.
- Spoon the warm peach mixture into serving bowls or one large serving dish.
- Top immediately with the toasted oat crumble and serve warm.
