Description

This Overnight Banana French Toast Casserole is an easy make-ahead breakfast packed with sweet banana flavor, soft custardy bread, warm cinnamon, and a buttery streusel topping. It is perfect for holiday brunches, family breakfasts, and special mornings.


Ingredients

  • 1 pound loaf sourdough or French bread, cut into chunks
  • 8 large eggs
  • 2 cups whole or 2% milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, unpacked
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 6-7 medium bananas, chopped
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar, firmly packed
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cut into pieces


Instructions

  1. Grease a 9×13-inch casserole dish.
  2. Add the bread chunks to a large bowl and set aside.
  3. In another large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, and cinnamon.
  4. Pour the egg mixture over the bread chunks. Add the chopped bananas and gently stir until everything is evenly combined.
  5. Pour the bread mixture into the prepared casserole dish and spread it evenly. Cover and refrigerate overnight.
  6. When ready to bake, preheat the oven to 350°F (176°C).
  7. Bake the casserole for 35-40 minutes, or until it reaches your desired level of doneness.
  8. While the casserole bakes, combine the flour, brown sugar, and cinnamon for the streusel topping.
  9. Add the butter and mash it into the dry mixture until a crumbly mixture forms.
  10. When the casserole looks almost done, remove it from the oven and crumble the streusel evenly over the top.
  11. Continue baking for about 5 minutes, or until the streusel is melted over the top.
  12. Serve warm with syrup.

Notes

  • For the bananas, slice them and cut each slice into quarters.
  • Use fresh bread rather than stale bread to help prevent the casserole from becoming soggy.
  • Make sure to bake at the recommended temperature for the best texture.
