Description

Pina Colada Lush is an easy no-bake tropical dessert made with a golden Oreo crust, creamy pineapple cheesecake layer, coconut pudding, whipped topping, and toasted coconut. Chilled until set, it is a refreshing treat that tastes like a tropical vacation in every bite.


Ingredients

  • 20 golden Oreo cookies
  • 3 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, room temperature
  • 1/4 cup powdered sugar
  • 8 ounces crushed pineapple, drained
  • 8 ounces whipped topping, divided
  • 3.4 ounces instant coconut pudding mix
  • 1 cup milk
  • 1/2 cup toasted coconut
  • Cherries, for garnish


Instructions

  1. Crush the golden Oreo cookies and combine them with the melted butter. Press the mixture firmly into the bottom of an 8×8-inch glass baking dish to form the crust.
  2. In a large bowl, beat together the room-temperature cream cheese, 4 ounces of whipped topping, powdered sugar, and drained crushed pineapple until smooth and fully combined.
  3. Spread the cream cheese and pineapple mixture evenly over the Oreo crust.
  4. Whisk together the milk and instant coconut pudding mix. Let the mixture sit for a few minutes to thicken, then spread it evenly over the cream cheese layer.
  5. Spread the remaining 4 ounces of whipped topping over the coconut pudding layer.
  6. Sprinkle the toasted coconut evenly over the top and garnish with cherries.
  7. Refrigerate for a few hours, or until thoroughly chilled and set, before slicing and serving.

Notes

  • Be sure to drain the crushed pineapple well so the layers stay firm.
  • The dessert can be prepared several hours ahead and kept refrigerated until ready to serve.
  • For a smaller pineapple flavor, use about 1/3 cup of well-drained crushed pineapple.
  • To make the crust easier to slice, press the crushed Oreo mixture firmly and evenly into the baking dish.
  • Keep the lush refrigerated until serving for the best texture.
