Description
A sweet and smoky pineapple chipotle salsa made with blistered tomatillos, garlic, onion, and juicy pineapple blended with chipotle peppers. Perfect for tacos, chips, grilled meats, and Mexican-inspired meals.
Ingredients
- 7–8 tomatillos, husks removed and halved
- 4 garlic cloves
- 2 thick onion slices
- 2 fresh pineapple slices or canned pineapple rings
- 1–2 chipotle peppers in adobo
- 1 tsp kosher salt, plus more to taste
Instructions
- Preheat oven to high broil and place rack on the top position. Line a baking sheet with foil.
- Add tomatillos, garlic, onion slices, and pineapple to the baking sheet.
- Broil for 10 minutes until ingredients begin to char.
- Flip all ingredients and broil for another 5 minutes until lightly blistered and smoky.
- Transfer roasted ingredients to a blender or food processor.
- Add chipotle peppers and blend briefly until chunky.
- Taste and season with salt as desired.
- Serve immediately with tacos, chips, or grilled dishes.
Notes
- White onion works best, but yellow or red onion can also be used.
- Do not over-blend; the salsa should remain slightly chunky.
- Store in an airtight container in the refrigerator for up to 1 week.
- The flavor improves after chilling for several hours.
