Description

Raspberry Cheesecake Crumble Bars combine a buttery graham cracker crust, a rich and creamy cheesecake filling, and a sweet-tart raspberry topping. Finished with a buttery crumble, these bars are perfect for holidays, parties, or an everyday dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 1/2 cups fresh raspberries
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine the graham cracker crumbs, melted butter, sugar, cinnamon, and salt. Press three-quarters of the mixture firmly into the bottom of the prepared pan.
  3. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth. Spread evenly over the crust.
  4. In a small saucepan over medium heat, cook the raspberries with the sugar, cornstarch, and lemon juice for 5–7 minutes, stirring until thickened.
  5. Spoon the raspberry mixture evenly over the cheesecake layer.
  6. Sprinkle the remaining graham cracker mixture over the top.
  7. Bake for 30–35 minutes, or until the filling is set and the crumble is lightly golden.
  8. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
