Description
Raspberry Cheesecake Crumble Bars combine a buttery graham cracker crust, a rich and creamy cheesecake filling, and a sweet-tart raspberry topping. Finished with a buttery crumble, these bars are perfect for holidays, parties, or an everyday dessert.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 1/2 cups fresh raspberries
- 1 large egg
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/4 teaspoon cornstarch
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine the graham cracker crumbs, melted butter, sugar, cinnamon, and salt. Press three-quarters of the mixture firmly into the bottom of the prepared pan.
- In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth. Spread evenly over the crust.
- In a small saucepan over medium heat, cook the raspberries with the sugar, cornstarch, and lemon juice for 5–7 minutes, stirring until thickened.
- Spoon the raspberry mixture evenly over the cheesecake layer.
- Sprinkle the remaining graham cracker mixture over the top.
- Bake for 30–35 minutes, or until the filling is set and the crumble is lightly golden.
- Cool completely, then refrigerate for at least 2 hours before slicing into bars.
