Description

Shrimp and Avocado Bowls with Mango Salsa and Lime Chili Sauce are fresh, vibrant, and full of tropical flavor. Juicy spiced shrimp, creamy avocado, sweet mango salsa, and a tangy chili-lime drizzle come together for a perfect light meal.


Ingredients

For the Bowls

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups cooked rice or quinoa
  • 1 avocado, sliced or cubed
  • 1/4 cup fresh cilantro, chopped

For the Mango Salsa

  • 1 mango, diced
  • 1/4 red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • Juice of 1/2 lime
  • Pinch of salt

For the Lime Chili Sauce

  • 1/4 cup mayonnaise
  • Juice of 1 lime
  • 12 tsp chili sauce (Sriracha)
  • 1/2 tsp honey


Instructions

  1. Season shrimp with olive oil, spices, and salt.
  2. Cook shrimp in a hot skillet for 2–3 minutes per side until pink and slightly charred.
  3. Mix mango, onion, bell pepper, cilantro, lime juice, and salt to make salsa.
  4. Whisk together mayo, lime juice, chili sauce, and honey for the sauce.
  5. Assemble bowls with rice or quinoa, shrimp, mango salsa, avocado, and cilantro.
  6. Drizzle with lime chili sauce and serve immediately.

  • Best served fresh for maximum flavor and texture.
