Ingredients
For the Bowls
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 2 cups cooked rice or quinoa
- 1 avocado, sliced or cubed
- 1/4 cup fresh cilantro, chopped
For the Mango Salsa
- 1 mango, diced
- 1/4 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 tbsp fresh cilantro, chopped
- Juice of 1/2 lime
- Pinch of salt
For the Lime Chili Sauce
- 1/4 cup mayonnaise
- Juice of 1 lime
- 1–2 tsp chili sauce (Sriracha)
- 1/2 tsp honey
Instructions
- Season shrimp with olive oil, spices, and salt.
- Cook shrimp in a hot skillet for 2–3 minutes per side until pink and slightly charred.
- Mix mango, onion, bell pepper, cilantro, lime juice, and salt to make salsa.
- Whisk together mayo, lime juice, chili sauce, and honey for the sauce.
- Assemble bowls with rice or quinoa, shrimp, mango salsa, avocado, and cilantro.
- Drizzle with lime chili sauce and serve immediately.
