Description

Slow Cooker Chicken Cacciatore features tender chicken thighs simmered with mushrooms, green peppers, tomatoes, and aromatic herbs in a rich tomato sauce. An easy, comforting family dinner that’s perfect served with pasta, rice, or vegetables.


Ingredients

  • 2 teaspoons olive oil
  • Salt and black pepper, to taste
  • 8 boneless skinless chicken thighs (700g)
  • 1 small onion, finely chopped
  • 3 cloves garlic, crushed
  • 250g mushrooms, sliced
  • 1 small carrot, finely diced
  • 1 green bell pepper, finely chopped
  • 800g canned chopped tomatoes in tomato sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • Pinch red pepper flakes
  • 3 tablespoons tomato paste
  • 1 tablespoon red wine vinegar
  • 1 chicken stock cube
  • 1 handful fresh parsley, finely chopped


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken thighs with salt and black pepper.
  3. Sear chicken on both sides until lightly golden.
  4. Transfer chicken to the slow cooker.
  5. Add onion, garlic, mushrooms, carrot, bell pepper, tomatoes, herbs, red pepper flakes, tomato paste, vinegar, and stock cube.
  6. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  7. Stir in fresh parsley.
  8. Taste and adjust seasoning if needed.
  9. Serve hot with your favorite side dish.

  • Great served with pasta, mashed potatoes, rice, or roasted vegetables.
  • Store leftovers in the refrigerator for up to 4 days.
