Description

Spinach and Artichoke Chicken Casserole is a creamy, cheesy comfort food made with tender chicken, spinach, artichokes, Parmesan, and mozzarella. It is an easy baked dinner that’s perfect for family meals or potlucks.


Ingredients

  • 4 boneless, skinless chicken breasts, cooked and diced
  • 14 oz artichoke hearts, drained and chopped
  • 10 oz frozen chopped spinach, thawed and drained
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs, optional for topping


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish and set aside.
  2. Combine the cooked diced chicken, chopped artichoke hearts, and drained spinach in a large bowl.
  3. In a separate bowl, mix the mayonnaise, sour cream, Parmesan cheese, 1 cup of mozzarella, minced garlic, oregano, onion powder, salt, and pepper.
  4. Add the creamy mixture to the chicken and vegetables, stirring until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer. Top with the remaining mozzarella cheese.
  6. If desired, sprinkle breadcrumbs over the top for a crunchy finish.
  7. Bake for 35-40 minutes, or until the casserole is bubbly and golden brown on top.
  8. Remove from the oven and let it rest for a few minutes before serving.

Notes

  • Make sure the frozen spinach is thoroughly thawed and drained to prevent excess moisture in the casserole.
  • Drain the artichoke hearts well before chopping and adding them to the mixture.
  • Breadcrumbs are optional but add a delicious crunchy topping.
