Description

Strawberry Crunch Cheesecake Bites are creamy, no-bake cheesecake balls coated in a sweet, crunchy strawberry topping made with vanilla sandwich cookies, freeze-dried strawberries, melted butter, and strawberry gelatin powder. These bite-sized treats combine smooth cheesecake with nostalgic strawberry crunch flavor, making them perfect for parties, holidays, and make-ahead desserts.

Ingredients

  • For the Cheesecake Bites:
  • 16 ounces (450 g) full-fat brick-style cream cheese, softened to room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) cold heavy whipping cream
  • 1/2 cup (50 g) fine graham cracker crumbs (optional)
  • For the Strawberry Crunch Topping:
  • 10–12 Golden Oreos or Nilla Wafers, about 5 ounces (140 g)
  • 1.5 ounces (42 g) freeze-dried strawberries
  • 1/4 cup (56 g) unsalted butter, melted
  • 1–2 tablespoons (15–30 g) dry strawberry gelatin powder

Instructions

  1. Prepare the cheesecake base. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and free of lumps, about 2–3 minutes. Scrape down the sides of the bowl.
  2. Sweeten the cream cheese. Add the granulated sugar and vanilla extract. Beat on medium speed until fully incorporated and creamy, about 1–2 minutes.
  3. Whip the cream. In a separate chilled bowl, whip the cold heavy cream on high speed until stiff peaks form. Avoid over-whipping.
  4. Fold everything together. Gently fold about one-third of the whipped cream into the cream cheese mixture. Fold in the remaining whipped cream until no streaks remain. If using, gently fold in the graham cracker crumbs.
  5. Portion and shape. Use a small cookie scoop, about 1 inch (2.5 cm), or a spoon to portion the mixture. Gently roll each portion into a ball and place on a parchment-lined baking sheet.
  6. Freeze the cheesecake bites. Freeze the cheesecake balls for at least 2–3 hours, or until very firm.
  7. Crush the cookies. While the cheesecake balls chill, pulse the Golden Oreos or Nilla Wafers in a food processor until finely crushed but still slightly textured.
  8. Add the strawberries. Add the freeze-dried strawberries to the food processor and pulse until finely crushed and blended with the cookie crumbs.
  9. Mix the topping. Transfer the crumb mixture to a medium bowl. Add the melted butter and strawberry gelatin powder. Stir thoroughly with a fork until the crumbs are evenly coated and pink.
  10. Coat the bites. Remove the firm cheesecake balls from the freezer. Working with a few at a time, roll each ball in the strawberry crunch topping, gently pressing the crumbs onto the surface so they adhere.
  11. Final chill. Return the coated bites to the parchment-lined baking sheet and refrigerate for at least 30–60 minutes before serving.

Notes

  • Use full-fat, brick-style cream cheese for the best texture and stability.
  • Make sure the heavy cream is cold before whipping.
  • Freeze the cheesecake balls until firm so they are easier to coat.
  • Use freeze-dried strawberries for concentrated flavor and color without adding moisture; fresh or frozen strawberries are not suitable for the crunch topping.
  • Adjust the strawberry gelatin powder between 1 and 2 tablespoons according to your preferred flavor and color.
  • Keep the finished bites refrigerated until serving. They can be prepared ahead of time.
  • The graham cracker crumbs in the cheesecake filling are optional.
