Description

Stuffed Pepper Casserole is a comforting one-dish meal made with Italian sausage, tender bell peppers, rice, tomatoes, and plenty of melted mozzarella cheese.


Ingredients

  • 1 pound Italian sausage, cooked and drained
  • 1 tablespoon olive oil
  • 1/2 white onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 4 cups cooked long-grain white rice, drained and cooled
  • 15 oz diced tomatoes, drained
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 8 oz mozzarella cheese, shredded


Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch baking dish.
  2. In a medium saucepan, add the chopped onion and about half of the olive oil. Cook for 1-2 minutes.
  3. Add the chopped bell peppers and cook for another 2-3 minutes, until slightly softened. Remove the peppers and onions from the saucepan and set aside.
  4. In a large bowl, combine the cooked sausage, onions, peppers, rice, drained tomatoes, Worcestershire sauce, salt, pepper, oregano, garlic powder, and half of the shredded mozzarella.
  5. Transfer the mixture to the prepared baking dish and spread it evenly.
  6. Sprinkle the remaining mozzarella over the top.
  7. Bake for 20-25 minutes, until heated through and the cheese is melted and bubbly.
  8. Serve immediately.

  • The Italian sausage and seasoning provide the main flavor for this casserole.
  • For a cheesier casserole, you can double the amount of mozzarella.
  • Use any combination of three bell pepper colors you prefer.
