Description

Sweet and Spicy Thai Chicken is a quick and flavorful dinner featuring tender chicken coated in a sticky Thai-inspired sauce with the perfect balance of sweetness, heat, garlic, and lime.


Ingredients

  • 2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp sriracha (or more to taste)
  • 1 red bell pepper, sliced
  • 2 green onions, sliced
  • 1 tbsp sesame seeds


Instructions

  1. In a small bowl, whisk together sweet chili sauce, soy sauce, honey, lime juice, and sriracha.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 6–8 minutes until browned and cooked through.
  4. Stir in garlic and ginger and cook for 1 minute until fragrant.
  5. Add bell pepper and cook for 2–3 minutes until slightly tender.
  6. Pour sauce over the chicken and stir well to coat.
  7. Simmer for 3–4 minutes until the sauce thickens and becomes glossy.
  8. Garnish with green onions and sesame seeds before serving.

Notes

  • Serve over jasmine rice or rice noodles.
  • Add extra sriracha for more heat.
  • Leftovers keep well in the refrigerator for up to 3 days.
  • Garnish with fresh cilantro for extra flavor.
