Description
Sweet and Spicy Thai Chicken is a quick and flavorful dinner featuring tender chicken coated in a sticky Thai-inspired sauce with the perfect balance of sweetness, heat, garlic, and lime.
Ingredients
- 2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp sriracha (or more to taste)
- 1 red bell pepper, sliced
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- In a small bowl, whisk together sweet chili sauce, soy sauce, honey, lime juice, and sriracha.
- Heat oil in a large skillet over medium-high heat.
- Add chicken and cook for 6–8 minutes until browned and cooked through.
- Stir in garlic and ginger and cook for 1 minute until fragrant.
- Add bell pepper and cook for 2–3 minutes until slightly tender.
- Pour sauce over the chicken and stir well to coat.
- Simmer for 3–4 minutes until the sauce thickens and becomes glossy.
- Garnish with green onions and sesame seeds before serving.
Notes
- Serve over jasmine rice or rice noodles.
- Add extra sriracha for more heat.
- Leftovers keep well in the refrigerator for up to 3 days.
- Garnish with fresh cilantro for extra flavor.
