Description

Turkish Cabbage Stew is a comforting and hearty combination of ground beef and cabbage simmered in a rich broth flavored with tomato paste and warm spices.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 large red onion, finely chopped
  • 1 pound ground beef or lamb
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper flakes
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon dried coriander
  • Salt and pepper to taste
  • 1 medium cabbage head, roughly chopped
  • 2 cups beef broth


Instructions

  1. Place a Dutch oven over medium heat and melt the butter.
  2. Add the onion and sauté for 3-5 minutes until softened.
  3. Add the ground beef and cook for 5-7 minutes until browned, breaking it apart as it cooks.
  4. Stir in the tomato paste, red pepper flakes, paprika, cumin, coriander, and salt.
  5. Cook for 1 minute until the spices become fragrant.
  6. Add the chopped cabbage and beef broth.
  7. Cover and simmer for 20-25 minutes, stirring occasionally, until the cabbage is tender.
  8. Taste and adjust the seasoning with salt and pepper.
  9. Garnish with parsley and serve.

Notes

  • White or green cabbage works best for this recipe.
  • Wash the cabbage thoroughly before cooking.
  • Don’t add too much broth because the cabbage releases liquid while cooking.
  • Brown the meat well to develop a deeper flavor.
  • The cumin, coriander, and paprika create the stew’s signature taste.
