Description
Turkish Cabbage Stew is a comforting and hearty combination of ground beef and cabbage simmered in a rich broth flavored with tomato paste and warm spices.
Ingredients
- 2 tablespoons unsalted butter
- 1 large red onion, finely chopped
- 1 pound ground beef or lamb
- 2 tablespoons tomato paste
- 1 teaspoon red pepper flakes
- 1 tablespoon sweet paprika
- 1/2 teaspoon cumin
- 1 teaspoon dried coriander
- Salt and pepper to taste
- 1 medium cabbage head, roughly chopped
- 2 cups beef broth
Instructions
- Place a Dutch oven over medium heat and melt the butter.
- Add the onion and sauté for 3-5 minutes until softened.
- Add the ground beef and cook for 5-7 minutes until browned, breaking it apart as it cooks.
- Stir in the tomato paste, red pepper flakes, paprika, cumin, coriander, and salt.
- Cook for 1 minute until the spices become fragrant.
- Add the chopped cabbage and beef broth.
- Cover and simmer for 20-25 minutes, stirring occasionally, until the cabbage is tender.
- Taste and adjust the seasoning with salt and pepper.
- Garnish with parsley and serve.
Notes
- White or green cabbage works best for this recipe.
- Wash the cabbage thoroughly before cooking.
- Don’t add too much broth because the cabbage releases liquid while cooking.
- Brown the meat well to develop a deeper flavor.
- The cumin, coriander, and paprika create the stew’s signature taste.
