Description
This easy tzatziki pasta salad is packed with crisp vegetables, fresh herbs, and a creamy tangy Greek yogurt dressing. Perfect for BBQs, potlucks, and refreshing summer meals.
Ingredients
- 16 oz rotini pasta
- 1 cucumber, diced
- 1 carrot, diced
- 1/2 sweet onion, diced
- 1 bell pepper, diced
- 1/2 cup kalamata olives, chopped
- 1/2 cup fresh parsley
- 1 1/2 cups plain Greek yogurt
- 1/2 cup red wine vinegar
- Juice of 1/2 lemon
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp dried oregano
- 2 tbsp fresh dill
Instructions
- Cook rotini pasta according to package instructions. Drain and allow to cool completely.
- In a large mixing bowl, combine pasta, cucumber, carrot, onion, bell pepper, olives, and parsley.
- In a mason jar or small bowl, whisk together Greek yogurt, red wine vinegar, lemon juice, garlic, onion powder, oregano, and dill until smooth.
- Pour the tzatziki dressing over the pasta salad and toss well to coat evenly.
- Refrigerate for at least 1 hour before serving for best flavor.
- Serve chilled and enjoy.

- For a vegan version, use dairy-free yogurt.
