Description

This easy tzatziki pasta salad is packed with crisp vegetables, fresh herbs, and a creamy tangy Greek yogurt dressing. Perfect for BBQs, potlucks, and refreshing summer meals.


Ingredients

  • 16 oz rotini pasta
  • 1 cucumber, diced
  • 1 carrot, diced
  • 1/2 sweet onion, diced
  • 1 bell pepper, diced
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup fresh parsley
  • 1 1/2 cups plain Greek yogurt
  • 1/2 cup red wine vinegar
  • Juice of 1/2 lemon
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 2 tbsp fresh dill


Instructions

  1. Cook rotini pasta according to package instructions. Drain and allow to cool completely.
  2. In a large mixing bowl, combine pasta, cucumber, carrot, onion, bell pepper, olives, and parsley.
  3. In a mason jar or small bowl, whisk together Greek yogurt, red wine vinegar, lemon juice, garlic, onion powder, oregano, and dill until smooth.
  4. Pour the tzatziki dressing over the pasta salad and toss well to coat evenly.
  5. Refrigerate for at least 1 hour before serving for best flavor.
  6. Serve chilled and enjoy.
