Vegan Caesar Pasta Salad combines crisp romaine, tender pasta, crunchy cheesy herb croutons, and a creamy homemade vegan Caesar dressing for the ultimate fresh and satisfying salad.
Ingredients
- Vegan Cheesy Herb Croutons
- 1 loaf crusty bread (ciabatta)
- 3 tablespoons olive oil
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- Vegan Caesar Dressing
- 1/2 cup vegan mayonnaise
- 2 teaspoons Dijon mustard
- 1 tablespoon capers
- Juice of 2 lemons (about 2 tablespoons)
- 2 tablespoons nutritional yeast
- 1 clove garlic
- 1/4 teaspoon salt
- Pinch black pepper
- Salad
- 1 head romaine lettuce, chopped
- 16 ounces pasta
Instructions
- Cook the pasta according to the package directions. Drain and let it cool completely.
- Preheat the oven to 375°F.
- Cut the bread into cubes. Toss with olive oil, nutritional yeast, garlic powder, basil, and salt until evenly coated.
- Spread the bread cubes onto a baking sheet and bake for 15-20 minutes until golden brown and crispy.
- Meanwhile, add the vegan mayonnaise, Dijon mustard, capers, lemon juice, nutritional yeast, garlic, salt, and black pepper to a blender. Blend until smooth and adjust seasoning to taste.
- In a large bowl, combine the chopped romaine, cooled pasta, and croutons.
- Pour the dressing over the salad, toss until evenly coated, and serve immediately.
Notes
- If preparing ahead, combine the pasta, romaine, and croutons, then add the dressing just before serving.
- If the dressing is too thick, whisk in a little water until it reaches your desired consistency.
- Store leftover dressing in the refrigerator for up to 5 days.
- Best enjoyed fresh to keep the croutons crispy.
