Description

Vegan Caesar Pasta Salad combines crisp romaine, tender pasta, crunchy cheesy herb croutons, and a creamy homemade vegan Caesar dressing for the ultimate fresh and satisfying salad.


Ingredients

  • Vegan Cheesy Herb Croutons
  • 1 loaf crusty bread (ciabatta)
  • 3 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • Vegan Caesar Dressing
  • 1/2 cup vegan mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 tablespoon capers
  • Juice of 2 lemons (about 2 tablespoons)
  • 2 tablespoons nutritional yeast
  • 1 clove garlic
  • 1/4 teaspoon salt
  • Pinch black pepper
  • Salad
  • 1 head romaine lettuce, chopped
  • 16 ounces pasta


Instructions

  1. Cook the pasta according to the package directions. Drain and let it cool completely.
  2. Preheat the oven to 375°F.
  3. Cut the bread into cubes. Toss with olive oil, nutritional yeast, garlic powder, basil, and salt until evenly coated.
  4. Spread the bread cubes onto a baking sheet and bake for 15-20 minutes until golden brown and crispy.
  5. Meanwhile, add the vegan mayonnaise, Dijon mustard, capers, lemon juice, nutritional yeast, garlic, salt, and black pepper to a blender. Blend until smooth and adjust seasoning to taste.
  6. In a large bowl, combine the chopped romaine, cooled pasta, and croutons.
  7. Pour the dressing over the salad, toss until evenly coated, and serve immediately.

Notes

  • If preparing ahead, combine the pasta, romaine, and croutons, then add the dressing just before serving.
  • If the dressing is too thick, whisk in a little water until it reaches your desired consistency.
  • Store leftover dressing in the refrigerator for up to 5 days.
  • Best enjoyed fresh to keep the croutons crispy.
